Time for another Tasty Tuesday here at Tinalicious. And it may give you a sense of dejavu in the process. Because...way back in 2013, I shared a recipe with you for The Best Broccoli Cheese Soup Ever. And the recipe I'm sharing with you today is also for Broccoli Cheese Soup. But this time it's easier and it really is my new all time favorite! So, it may in fact be THE Best Broccoli Cheese Soup. Like EVER! You'll have to judge for yourself.
If you're a Broccoli Cheese Soup fan like I am, I think you're going to love it. And easy recipes are always great when you just want a little something to eat. I'm sure you don't have anything more important to do right now anyway, am I right?
So here we go.
Easy Broccoli Cheese Soup
Ingredients:
- 1 Tablespoon Butter
- 1 Small Onion, diced
- 3-4 Cups Fresh Broccoli, chopped small or diced
- 4 Cups Chicken Broth
- 1 Teaspoon Thyme
- 1 Teaspoon Garlic Powder
- Salt & Pepper, to taste
- 6 tablespoons flour
- 2 Cups Heavy Cream (You can substitute Light Cream, if you like)
- 2 Cups Sharp Cheddar Cheese, shredded
- 1/3 Cup Parmesan Cheese (I used Kraft, but you can use fresh grated)
Directions
- In a large saucepan, cook butter and onions over medium heat until onion softens (about 3 minutes).
- Add chicken broth, broccoli and seasonings. Simmer until the broccoli is softened, about 6-8 minutes.
- Place flour in a small bowl. Add in the cream a little at a time, and keep stirring until it's smooth.
- Bring the vegetables and broth to a boil and whisk in the cream & flour mixture. Continue whisking until it's thick and bubbly, about 3-4 minutes.
- Remove from heat, then stir in the cheeses until they're melted.
- Serve immediately. Approximately 4 servings.
